From grandfather to son and then to grandson. I am Maximilian Klippel, a passionate organic beekeeper. On paper, I started beekeeping in 2016, although as a young boy I watched my father and grandfather and helped diligently. When I started beekeeping, I took over a bee house in the Eglhartinger Forest, the basis of honey huts. In total, we manage three huts.

40 years ago, my grandfather started his first beehives on the family farm. This led to the first self-built bee house. It didn't take long until another location was found and the beehives multiplied. A deep and long-lasting friendship developed from a favor to support a local beekeeper. When my friend visited, my father was allowed to accompany him. Captivated by the bees and beekeeping, he decided to become a hobby beekeeper himself and the third bee house followed.

I am supported by my wife Melanie. We have been on the same path since 2012 and have discovered over the years the versatile uses of honey. Step by step, we have created a wonderful and natural spot for the bees. In 2019, I followed my father's example and had my business certified organic.

"honey huts"

The name was created in 2019 at the Christmas market in Zorneding. So that our honey stand could be recognized immediately, we hung up the homemade wooden sign "Honey Hut". This sign has also been hanging on one of our bee houses since then. Since there are a total of three bee houses in our apiary, the plural and thus the name "Honey Huts" was created. The megalomania of a hobby beekeeper 😉

All about honey

When the sun drives away the winter in spring, our hardworking honey bees (Apis mellifera carnica) awaken from their winter hibernation and begin their first orientation flights. To produce honey, the honey bee collects flower nectar and honeydew every day. We could try to explain the wonderful and varied flavors of the different varieties, but trying the taste of the honey yourself and discovering the different sweetnesses is much more exciting. Try to see it with different eyes. Depending on the variety of flowers and nature, our honey range currently consists of creamy flower honey and liquid forest and flower honey.

Our organic honey gin

The idea for our honey gin was born in 2020 from the background of refining our own honey. Values ​​such as regionality, quality and craftsmanship are very important to us. Beekeeping is a craft and we beekeepers in Germany produce excellent honey, thanks in part to the honey regulations. This quality should also be reflected in the refinement, which is why we chose "TheDuke" as a partner and one of the European giants in the gin industry based on our values. They also manufacture according to organic guidelines, which is why our honey gin has also received its organic seal.

Real handmade and regional organic honey gin from our own beekeeping! In collaboration with the organic distillery, we have produced a unique gin from purely organic raw materials. It is important to us to put our honey in the foreground, which is used very early on in the production process. The combination of selected herbs and spices, as well as our full-bodied honey, results in a balanced variety of flavors that reflect the forest and the local flowering diversity. A subtle citrus note gives the gin a pleasant freshness, while the juniper combines the fruity component with the forest. The different flowering phases of a year ultimately determine the taste and characterize the corresponding vintages.
